Though the word interesting looks like it has four syllables in writing, we usually say it with three syllables in speaking.
This is because many native speakers drop syllables and in this word we drop the uh sound.

However, sometimes native speakers do say this word with four syllables. This is usually when we want to stress that we find something very interesting.
