come up with -,「（アイデアや計画、解決策などを）考え出す、思いつく、見つけ出す」
a substitute for -, 「～の代わりになるもの、代わりの人」で、ここでは「代替食品」
substitute 動詞としても使い、substitute A for Bなら「ＡをＢの代わりに用いる」
なお、代替物を主語にする場合は、A substitutes for B「ＡがＢの代わりになる」
動詞のgrill「じか火で焼く、網焼きにする」、「かば焼き」の行程を表す英語はないため、「うなぎのかば焼き」は簡単にgrilled eelと訳されることが多いです。
-based「～由来の、～に基づいた」、「～に本拠地を置く」
ingredient「原料、材料、成分」
mimic「まねをする、よく似る、再現する」、「（特にからかうことを目的に）人や動物などの物まねをする」ここでは主語が製品なので「似せる」というニュアンス
meat「（食用の）肉」で、普通は魚肉を表すときには使いませんが、カニやエビなどの「身の部分、食用部分」という意味で使われることがあります。例えば、crab meatなら「カニの身」ですし、white meatなら「白身」
skin「皮」
connect「つなぐ」
ここでの connecting tissueは、うなぎの身と皮の間のゼラチン質の部分を指しています。
動詞の brown「きつね色に焦がす、焦げ目をつける、日焼けさせる」
alternative は substitute の言い換えで「代わりとなるもの、取って代わるもの」
substitute「入れ替えるもの」であるのに対して、alternativeには「別な選択肢」というニュアンスがあります。its eel alternative「それが提供する、うなぎの代わりになりうるもの」
ちなみに「代替肉」には、meat alternative, meat substituteなどさまざまな言い方があります。
